I think the best conversions are always affiliates that require the least from the visitor (obviously). Zip/Email submits fit into this mold, as do dating websites like Mingles. They have low payout per signup though, but you'll get a lot more conversions and thus will make up for that shortcoming.

Plus there are various blackhat methods to do these incredibly easy signups (craigslist anyone?)
